Do you love sprinkles? I know I do! And I’m so glad they now have some amazing vegan sprinkles to play with! I just had to use my sprinkles for this ADORABLE batch of delicious vegan funfetti cookies! These are soft sugar cookies packed full of rainbow sprinkles to get that unicorn-funfetti vibe.
Not only are these the cutest cookies I’ve ever made, they are probably the most delicious sugar cookies you’ll ever see! And it’s so easy to make you don’t even need a mixer. Two bowls and a spoon will get you these gorgeous cookies in about 15 minutes! These cookies are light and fluffy with a subtle vanilla flavor and super fun rainbow sprinkles!
These cookies are perfect for year round treats! For a fun Spring treat use pastel or rainbow sprinkles, for a soft Holiday cookie try adding red and green sprinkles. This is a cookie to be savored year round!
Why should you and your family make Vegan Funfetti Cookies?
This recipe is so easy to make and only involves one vegan substitute – butter. Simply use a stick of vegan butter, or substitute coconut oil for the butter. Either way you make these they’ll come out scrumptious! This is one of my easiest recipes to make and can be whipped together in just 5 minutes.
With a short baking time you’ll be enjoying fresh from the oven cookies in about 15 minutes! Even I have time to make these vegan funfetti cookies before dinner. They make a great dessert or afternoon snack and are so fun to make! This is a great recipe to make with your kids. They will just love adding in the colorful sprinkles!
What goes into Vegan Funfetti Cookies?
This recipe is so basic I’m guessing you have all the ingredients in your pantry already! Let’s look at what you’ll need to make these vegan funfetti sugar cookies.
I used all-purpose flour, I don’t recommend whole wheat flour for this recipe. I haven’t tried this with a gluten free flour, but I know Bob’s Red Mill’s Gluten Free flour is a reliable gluten free option that is a 1 to 1 replacement for regular flour. You might try this if you’re going gluten free. Also, remember to check your sprinkles as some contain gluten.
Baking Powder & Baking Soda
Used as our leavening agents in this recipe. Remember that the baking soda needs to be activated by vinegar so don’t forget that step! It’s a fairly common question so I’ll just note here that both baking powder and baking soda are in fact vegan.
I use a little salt in all of my baked goods to enhance the flavors and let the sugar notes sing. I used kosher salt in my recipe but feel free to use the salt you prefer.
Sprinkles (or Jimmies) to Put the Fun in these Vegan Funfetti Cookies
Time to break out those vegan sprinkles! What makes these cookies so adorable are the colorful sprinkles swirled throughout the cookies. So cute you’ll want to share with everyone!
I used regular granulated white sugar.
I used both of these options while developing this recipe and found that the vegan butter left the cookies with a subtle buttery flavor that was really good. You could substitute coconut oil if you don’t have vegan butter. Or you could make your own vegan butter from this Homemade Vegan Butter Recipe.
The recipe uses coconut oil, vegetable oil (or canola, grapeseed or other neutral tasting oil), nutritional yeast and cashew cream. It comes together in just 5 minutes. A bonus to making your own butter for this recipe is that it will already be in the melted state so you won’t have to wait for the butter to set up. Win win in my book!
A little water to replace some of the liquid that eggs would traditionally add. This helps the batter come together.
I used distilled white vinegar but any vinegar will work to activate the baking soda. Try using Apple Cider Vinegar for some added nutrition.
A full teaspoon of vanilla extract gives these vegan funfetti cookies a delicious vanilla flavor, but without that alcohol flavor that can overpower more delicate pastries.

This recipe doesn’t just yield adorable and delicious cookies, it’s also a breeze to whip together! Follow along with this step by step guide and you’ll get some great tips on how to make the best soft sugar cookies of your life.
Read the Recipe Start to Finish
Start by gathering all your ingredients and preheating the oven. This recipe uses melted vegan butter so there’s no extra step to letting the butter soften just pop it in the microwave in 30 second increments stirring in between until the butter is melted. Alternatively you could use a stove top to melt the butter.
Now is also the time you want to preheat your oven. These vegan funfetti cookies bake at 375 deg F (190.5 deg C). Give your oven enough time to heat up to make these cookies come out soft on the inside and slightly firmer on the outside.
Required Equipment for this Recipe
This recipe only requires 2 bowls, a spoon, a cookie sheet and either parchment paper or a baking mat. If you’ve ever made cookies you can for sure make these!
When you’re ready to get started you will need to have one bowl for your dry ingreidnets and one for your wet ingredients. It’s interesting to know that in baking, sugar is considered a wet ingredient.
Now you’re ready to start putting together your Vegan Funfetti Cookie dough
Put all of your dry ingredients into one bowl and whisk. This would be your flour, baking powder, baking soda, salt and your vegan sprinkles.
In the second bowl add your sugar, melted vegan butter, water, vinegar and vanilla extract. Whisk these ingredients until they’re fully combined and most if not all of the sugar has melted into the mixture.
Add your wet ingredients to your dry ingredients and use a silicone or wooden spoon to mix the batter all together, just until incorporated. You may need to add a bit more flour if your dough is too sticky. And if your dough is too dry or crumbly add in more water a tablespoon at a time until you get a cookie dough consistency.
These cookies keep their shape well in the oven so there’s no need for any chill time. Your cookies are now ready to be scooped. I use an ice cream scoop to portion out my cookies but you could use 2 spoons and get the same effect. Scoop out your dough onto a prepared cookie sheet. This recipe makes between 12-18 cookies depending on the size you are wanting to achieve.
Time to bake your Vegan Funfetti Cookies
When your cookies are ready, bake at 375 deg for between 8-10 minutes. You will know they’re done when the cookies are still slightly soft to the touch on top, but the bottoms are firm. You want a nice light color to the cookies so don’t wait until they’ve gotten much color on them.
After baking let your cookies cool for a few minutes on the cookie sheet before transferring to a wire rack to cool completely. Do not skip the cooling rack step or you’ll end up with cookies that are overdone and possibly crunch on the bottom. Ask me how I figured that one out haha!

If your dough is too sticky add additional flour 1 tablespoon at a time. If your dough is too dry or crumbly add in water 1 tablespoon at a time until you reach a cookie dough consistency.
Step 5: Portion out your dough onto your prepared cookie sheet. Bake for 8-11 minutes at 375 deg F. Your cookies are done when they’re still slightly soft to the touch on the top but baked through on the bottoms. They should be a very light color (besides the sprinkles!).
